京尼平交联nisin/壳聚糖抗菌膜的制备与性能研究

摘要:Nisin是高效安全的典型抗菌肽,是无毒副作用的天然食品防腐剂。本研究通过京尼平将nisin与壳聚糖交联制备含有nisin的抗菌膜,对抗菌膜的性能进行表征,并研究接枝对nisin抗菌活性的影响。结果表明:当抗菌膜中京尼平与壳聚糖的比值增加至1:20时,抗菌膜颜色加深;孔隙增大,孔隙数量增加;溶胀率从425.71±2.80%下降至134.79±10.38%;拉伸强度从58.65±1.21 MPa先增加至144.42±1.71 MPa后下降至67.68±5.34 MPa;断裂伸长率从7.29±0.49%降低至2.89±0.41%。此外,通过抗菌实验验证了nisin在接枝后仍保留抗菌活性,可以应用在抗菌膜中。

Nisin/chitosan antibacierial film prepared by genipin and study of properties
Abstract:Nisin is a typical antibacterial peptide with high efficiency and safety. It is a natural food preservative with low toxicity. In this study, nisin and chitosan were crosslinked by genipin to prepare antibacterial filmcontaining nisin. The properties of the film were characterized and the effect of grafting on the antibacterial activity of nisin was studied. The results showed that when the ratio of genipin to chitosan of the film increased to 1:20, the color of the film deepened; the size and the number of pores increased; the swelling ratio decreased from 425.71±2.80 to 134.79±10.38%; the tensile strength increased from 58.65±1.21 to 144.42±1.71 MPa and then decreased to 67.68±5.34 MPa; the elongation at break decreased from 7.29±0.49 to 2.89±0.41%.In addition, it was verified by antibacterial experiments that nisin retained activity after grafting and could be used in the antibacterial film.
