白藜芦醇-膳食纤维复合物的制备及其性质研究

摘要:白藜芦醇是一种天然抗氧化剂,具有多种健康益处,但其水溶性差、生物可及性低限制了其作为食品添加剂的应用。文本通过白藜芦醇分别与玉米可溶性膳食纤维、抗性淀粉和抗性糊精形成复合物来提高白藜芦醇的水溶性。复合物中白藜芦醇水溶性提高的原因是白藜芦醇分子内部原本的相互作用力被打破以及白藜芦醇以无定型存在于复合物中。水溶性的提高同时导致了复合物中白藜芦醇的高溶解速率和快速释放。此外,复合物中白藜芦醇的生物可及性是原料白藜芦醇的2.5倍,且复合物的形成使得白藜芦醇的DPPH自由基清除活性提高了65%。白藜芦醇-膳食纤维复合物具有良好的性质,可以作为补充剂或功能性配料应用于食品工业中。

Preparation and properties of resveratrol-dietary fiber composites
Abstract:Resveratrol is a naturally occurring antioxidant with various health benefits, but the poor water solubility and low bioaccessibility of resveratrol limit its application as a food additive. Corn soluble dietary fiber, resistant starch and resistant maltodextrin were used to increase the water solubility of resveratrol via preparation of composite. The solubility improvement was ascribed to the disruption of original interactions between resveratrol molecules and the presence of resveratrol in composites as amorphous. High dissolution rate and rapid release was achieved for resveratrol in the composites due to its increased water solubility. Additionally, the bioaccessibility of resveratrol in composites was about 2.5 times that of raw resveratrol, and the formation of composites increased the DPPH free radical scavenging ability of resveratrol by 65%. Resveratrol-dietary fiber composites had good properties and could be used as supplements or functional ingredients in foodindustry.
