明胶/羧甲基纤维素钠复合凝聚物的制备及性质研究

摘要:为确定可用于明胶/羧甲基纤维素钠(CMC)复合凝聚体系的CMC,本文通过将明胶与不同粘度的CMC(FL9、FM9、FH9、FVH9)进行组合,比较了体系浊度,复合凝聚物(复聚物)产率,形态及粒径分布的差异,并对四种复聚物的界面性质(乳化性、界面张力)及包埋性能进行了研究。结果表明:不同粘度CMC下的复合凝聚体系,均在明胶/CMC之比为9:1(w/w)、复凝聚pH为4.50时具有较高的产率, CMC粘度越小,越有利于形成球形复聚物且粒径分布均一;明胶/FL9具有最高的乳化活性及最低的界面张力;基于明胶/FL9体系制备的的肉桂醛复合凝聚微胶囊呈粒径均一的球状多核形态,产率及效率分别为87.56%、93.03%,均显著高于其他三组,反映了其更好的包埋性能。

Characterization of complex coacervates prepared by gelatin and sodium carboxymethyl cellulose
Abstract:The aim of this study was to select the sodium carboxymethyl cellulose (CMC) for the gelatin/CMC complexes. The complexion mechanism of gelatin and carboxymethyl cellulose and their coacervates formation process were studied as a function of pH and protein to polysaccharide mixing ratio (w/w). Four kinds of CMC(FL9,FM9,FH9 and FVH9) with different viscosity were chosen and different mixing ratio of 7:1, 9:1, 11:1 (gelatin/CMC, w/w), were studied to evaluate their individual coacervates transition pattern for zeta potential, turbidity, morphology, size distribution and coacervates yield. The interficial properties including emulsion property and interfacial tension, encapsulation capability of four kinds of gelatin/CMC complex coacervates were investigated. Coacervates with better morphology, good size distribution and highest yield were observed with gelatin/CMC at mixing ratio of 9:1 and pH 4.40. The evaluation of interfacial properties showed that gelatin/FL9 experienced a higher emulsion activity and a lower interfacial tension than the others complexes, indicating that gelatin/FL9 has a better encapsulation capability. The encapsulation of cinnamon aldehyde based on the complexes of gelatin/CMC showed that gelatin/FL9 experienced a nice spherical shape and uniform particle size, while the encapsulation yield and efficiency were 87.56% and 93.03%, respectively.
