电子自旋共振技术评价花生油氧化稳定性

摘要:油脂氧化是自由基链式反应,电子自旋共振(ESR)波谱技术是检测自由基最直接灵敏的方法,因而可用于评价花生油的氧化稳定性。通过对生成的自由基进行定量,进而用曲线方程拟合自由基增长趋势可得到诱导时间。为了探究ESR方法评价氧化稳定性的能力,在样品中加入几种常用的抗氧化剂,得到的诱导时间与传统的油脂氧化稳定仪(Rancimat)方法进行相关性分析,相关系数r达到了0.9938。此研究证明了ESR法可在较温和条件下快速地评价花生油的氧化稳定性。

Evaluation on the Oxidative Stability of Peanut Oil by using Electron Spin Resonance Spectroscopy
Abstract:Lipid oxidation is free radical reaction. Electron Spin Resonance (ESR) spectroscopy, which is the most sensitive method to detect free radicals, can be used to evaluate the oxidative stability of peanut oil. The amount of the free radicals can be calculated with EMX plus ESR, and we can get the Induction time by spinning with Boltzmann equation. The oxidative stability was studied by putting several different oxidations into oil samples. The results showed that the Induction time obtained from ESR method was related to Rancimat method with r=0.938, which showed that these two methods were highly related. In summary, this study proved that ESR could be used to study oxidative stability of peanut oil in a short time under mild conditions. .
