不同养殖模式对中华鳖裙边品质的影响

摘要:为找出不同养殖模式对中华鳖裙边品质的主要影响,本实验进行了多指标大量测定。得出不同养殖模式对中华鳖裙边的基本成分、羟脯氨酸占总氨基酸比例和组织学特性均有影响。三种不同养殖模式下,裙边的羟脯氨酸占总氨基酸比例、纤维密度和纤维直径有极显著差异(P<0.01)。纯外塘养殖中华鳖裙边的羟脯氨酸占总氨基酸比例为温室养殖的4.2倍,为两段式养殖的3.6倍。且通过分析得知,羟脯氨酸含量、纤维密度和纤维直径与评定中华鳖食用品质的主要质构参数(硬度、胶着性)之间有着极显著的相关性。所以中华鳖裙边的羟脯氨酸含量测定、纤维直径和密度测定可作为辨别不同养殖方式中华鳖的方法。

The Influence of Different Breeding Modes on the Quality of Chinese Trionyx Sinensis Calipash
Abstract:In this paper through a lot of the experimental determination of multiple indicators to find the main infuence of different breeding modes on the quality of Chinese Trionyx Sinensis Calipash. The result showed the basic components comparation and the histology characteristics comparision of the Chinese Trionyx sinensis under different breeding modes have very significant differences.(P<0.01). The content proportion of Hyp in wild Trionyx sinensis calipash was more than 3.2 timeswhich in greenhouse, more than 2.6 times which in two-stage breeding. Acomparation was carried out that the content proportion of Hyp, fiber diameter and fiber density had a highly significant correlation with the hardness and gumminess which were the main eating quality texture parameters.Hydroxyproline proportion, fiber diameter and fiber density measurement of calipash can be uesd as a way to identify the Chinese Trionyx sinensis under different breeding modes.
